Deliciously Ella: Coconut Thai Curry with Chickpeas

As you may know by now, I am always on the lookout for recipes that are delicious but incredibly good for you at the same time. I stumbled across Deliciously Ella by Ella Woodward in my local supermarket so picked it up and had a flick through. The recipes looked incredible and the pictures looked very appetizing. However, what attracted me the most was how simple each recipe looked and how the ingredients were all familiar to me. There was nothing I came across that made me go “what the hell is that and where do I get it from!”

I decided to buy the book and as soon as I got home, I spent the whole evening looking through all the wonderful recipes and book marking the ones that I immediately wanted to try.

Last night, I had a go for the first time at cooking one of Ella’s recipes. I chose the Coconut Thai Curry with Chickpeas as it looked quite simple and I love chickpeas! I hate spending ages having to prepare ingredients before you have even started cooking so this recipe was great. All you have to prepare is the aubergine, butternut squash and quickly chop up a handful of coriander and grate the ginger. Everything else just gets chucked straight into the pan, heated up and placed in the oven.

What I loved about this dish was the flavours. You can really taste everything that you have put in there: the freshness of the ginger, the spice of the chilli flakes and the potent taste of the coriander. The coconut milk makes the curry lovely and creamy without the calories and the butternut squash, aubergine and chickpeas make this quite a hearty, filling dish.

Even my Dad liked this dish and he is quite sceptical when it comes to trying anything which is vegetarian or vegan. I’m not going to write down the recipe here as I would like to strongly encourage you to buy Ella’s book. The amount of healthy and nutritious recipes that she has created is incredible and I can’t wait to try out some more! I am particularly eager to try her Sweet Potato Brownies and Strawberry Jam so watch out for posts about those in the future!
